Almond Crusted Tilapia

I’m trying to incorporate more seafood into my diet to be a little healthier because fish are are good source of protein, vitamins and minerals. In fact, the American Heart Association recommends at least two servings of fish per week to help lower cholesterol and blood pressure and reduce the risk of heart disease, heart attacks and strokes.

Tilapia is a great way to start adding more fish into your everyday diet! It’s cheap and it can spiced up in a lot of ways, like this one. I served mine with my skillet green beans and a little tarter sauce, but you can do yours with another veggie or rice. This was for a dinner for just me, so adjust accordingly if you are serving it for others!

Ingredients
1 tilapia filet
1/4 cup slivered almonds
1/4 cup whole wheat flour
1 egg
1 tablespoons of butter

Directions
Add almonds to a food processor until finely chopped. Add almond mixture to flour on a plate/bowl.

Heat butter in a pan over medium heat. Beat egg in a bowl and set up your “station” to coat the filet. Start by dipping it in the egg then the almond/flour mixture.

Place coated filet in hot pan. Cook for about 4 minutes on each side.
